Feeling hungry??? Enjoy the fresh and invigorating healthy vegetarian salad. Presenting Exotic Summer Salad
2 large Cucumbers, thinly sliced
4 cold, boiled Potatoes, sliced
1/4 each red and yellow Bell Peppers, seeded and thinly sliced
a handful of sliced Olives
1/2 -1 hot Green Chilli, slieced
6 garlic cloves, chopped
3 Spring Onions, finely and thinly sliced
Ingredients for the dressing:
4-6 tbsp Extra Virgin Olive Oil
2 tbsp White Vinegar
juice of 1/2 Lemon, or as per taste
Salt, as per taste
Pepper, as per taste
2 tbsp coriander leaves, finely chopped
2 tbsp Mint leaves, Finely chopped
1. Arrange the cucumber, potatoes and bell pepper slices on a serving.
2. Sprinkle chopped fresh chilli, garlic, spring onions and olives over the salad.
3. For dressing mix everything well and refrigerate for a while.
5. Chill the salad before serving. Garnish with Mint and coriander leaves. Serve the dressing in a separate bowl along with the salad. Enjoy!!!
