Enjoy multicolored and healthy Israeli Chopped Vegetable Salad…
1 each red, green, yellow (bell) peppers, halved and diced
3 garlic cloves, finely chopped
3 spring onions, thinly sliced
2 tbsp chopped fresh coriander leaves
2 tbsp each chopped fresh parsley and mint leaves
1/2 -1 hot fresh chilli (optional)
3-4 tbsp extra virgin olive oil
Juice of 1-1/2 lemons
salt and ground black pepper
a pinch of roasted cumin seeds
1. Using a sharp knife, finely dice the red, yellow green peppers, carrot, cucumber and tomatoes and place them in a large bowl.
2. Add garlic, spring onions, coriander, parsley, mint and chilli (if using) to chopped vegetables in a mixing bowl and toss together to combine.
3. pour olive oil, lemon juice over vegetables. Season with salt and pepper to taste and toss together. Chill for atleast 1 hour before serving. Add roasted cumin seeds and mix properly. Serve cold
