Monsoons are here. As we all know we should eat cooked vegetables, so here’s presenting Mediterranean Simple Cooked Salad!!
2 well flavored tomatoes, quartered
2 onions chopped
1/2 cucumber, halved lengthwise, seeded and sliced
1 green (bell) pepper halved, seeded and chopped
60 ml/ 4 tbsp of water
30ml/ 2 tbsp lemon juice
45 ml/ 3 tbsp olive oil
2 garlic cloves, crushed
30nml/ 2 tbsp chopped fresh coriander
salt and ground black pepper
1. Put the prepared tomatoes, onions, cucumber and green bell pepper into a large pan. Add the water,simmer for 5 minutes. Leave it to cool.
2.To make dressing. whisk together the lemon juice, olive oil and garlic in a bowl.
3. Strain the the vegetables, then transfer to a serving bowl. Pour the dressing over the salad, season with salt and pepper to taste and stir in chopped coriander. Garnish with coriander sprigs and serve immediately.
